But if you want to try slightly less beautiful, but tastier, boneless, skinless chicken thighs, we won’t argue! Use 2 pounds of chicken thighs, which will likely be more than 4 thighs, but they should still fit in the same size skillet. The cook time should be about the same, but be sure to check that the juice of the chicken is clear when center of thickest part is cut (at least 165°F). Since thighs are a little fattier, you can expect slightly more tender, more flavorful chicken. Bonus: they’re hard to “overcook.”
What is the Easiest Way to Slice the Chicken Breast Into Cutlets?
While some marry me chicken breast recipes require halving the chicken breasts to make cutlets, our version skips this step. If you do want to halve your chicken breasts, use a large, sharp knife to slice the chicken breast horizontally into two even pieces in one smooth motion. Chicken cutlets are often pounded between two pieces of plastic to create an evenly thick piece of chicken.
If using cutlets for this recipe, use just two chicken breasts (since a full pound will not fit in the skillet. Also, wait until sauce mixture is partially cooked before adding the browned cutlets back to the sauce, since adding according to the recipe instructions will result in overcooked chicken.
