Crust

Mascarpone Cream Cheese Frosting and Fruit Topping

  • 4 oz (half of 8-oz package) cream cheese, at room temperature
  • 1/4 cup (1/2 stick) unsalted butter, at room temperature
  • 1/4 cup mascarpone cheese, at room temperature
  • 1 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • Zest from 1 lemon
  • Pinch of kosher salt
  • 3 1/2 cups assorted fresh stone fruits (peaches, nectarines, plums, apricots or cherries)

    Preheat the oven to 375°F. Line two baking sheets with parchment paper and set aside.

    In a medium bowl, combine the cookie mix, 1/2 cup melted butter and the egg. Mix thoroughly to combine.

    Divide the dough in half if making two 10 1/2-inch pizzas, or into eighths if making individual mini pizzas. Roll the dough into balls, and place on prepared baking sheets. With the palm of your hand, flatten the dough balls to 1/4-inch thick circles. Sprinkle the dough with demerara or turbinado sugar. Bake for 12-15 minutes or until the pizzas are lightly golden brown. Cool completely on the baking sheets.

    Meanwhile, in a large bowl, combine the cream cheese, 1/4 cup unsalted butter, mascarpone cheese, powdered sugar, vanilla extract, lemon zest and pinch of kosher salt. With a hand mixer, beat on low speed until combined; then, increase the speed to medium-high and beat until smooth (approximately 4 minutes).

    Once pizza crusts are cooled, add frosting and spread on the pizza crusts using an offset spatula. Top with sliced stone fruits. Slice and enjoy immediately.
