Ingredients

  • 1 box Betty Crocker™ Suddenly Pasta Salad™ classic
  • 1/4 cup apple juice
  • 3 tablespoons vegetable oil
  • 2 cups cut-up cooked chicken
  • 4 cups cut-up romaine lettuce
  • 1 1/2 cups chopped apple
  • 1/2 cup coarsely chopped toasted walnuts
  • 4 oz crumbled feta cheese (1 cup)

Steps

    Cook pasta as directed on box. Meanwhile, in large bowl, stir together seasoning mix (from salad box), apple juice and oil. Add chicken; let stand while pasta is cooking.

    Drain pasta; rinse with cold water. Shake to drain well.
  • 3
    Add drained pasta and remaining ingredients to chicken mixture; toss to combine. Serve immediately, or cover and refrigerate until ready to serve.

    For cut-up cooked chicken in a hurry, pick up a store-bought deli rotisserie chicken, or keep a package of frozen fully cooked chicken breast strips in your freezer. Heat frozen strips as directed on package, and cut into pieces for this salad.

    Try this salad using 1 1/2 cups red grapes, halved, in place of the apple in this recipe.
