package (9 oz) refrigerated three-cheese tortellini

bag (12 oz) Green Giant® Valley Fresh Steamers® frozen mixed vegetables
1
can (14 oz) diced tomatoes with basil, garlic and oregano, undrained
1
can (15 oz) great northern beans, rinsed, drained
1
can (8 oz) tomato sauce
1/2
cup water
1/4
cup shredded fresh Parmesan cheese
  • 1 Heat oven to 375°F. In ungreased 2-quart casserole or 8-inch square glass baking dish, mix all ingredients except cheese. Cover with foil.
  • 2 Bake 45 minutes. Uncover and stir well. Sprinkle with cheese. Bake uncovered 10 to 15 minutes longer or until center is hot and cheese is golden brown.

This turned out really good, but I did make some changes. I used a 13 by 9 dish and it was filled to the top. Instead of 1 package of tortellini I used 2. Replacing the mixed vegetable bag I used fresh veggies; 2-3 regular sized carrots, 2 zucchinis, 4 cerely sticks, 3 mushrooms, 1 clove of garlic. I also added Italian Sausage(thanks to comment below). I used 1 can of tomatoes, 1 can of sauce, and the water, just like in the recipe. I ended up cooking it an additional twenty mintues covered(go by how you feel)since it was more food. It was at this point that I added a jar of spaghetti sauce over the top and than covered with about a bag and a half of preshredded parmesan cheese; than cooked another twenty mintues uncovered. Just by adding some extra things I thought that would make it better, it ended up being really tasty! Just go with how it looks and what you think it needs.

If you think about it, Minestrone Soup usually has some spinach in it. I was thinking about using that instead of the steamer veggies. Also, some Italian sausage would probably taste good in this dish!

I did not like the vegetables in with the tortellini. The baked tortellini was not any better than cooking the tortellini and adding spag sauce. I had to pick around the veggies. I would not recommend this.
