Tomato and Herb Salad

Great-tasting tomatoes are drizzled with a simple oil-and-vinegar dressing to create a show-stopping salad.

Ingredients

Dressing

1/4
cup extra-virgin olive oil

tablespoons red wine vinegar

teaspoon salt
1/2
teaspoon freshly ground pepper

Salad

tomatoes (assorted varieties, including yellow and/or heirlooms), sliced or cut into wedges
1
cup small grape tomatoes, cut in half
1/4
cup thinly sliced sweet onion (such as Walla Walla or Maui)
2
tablespoons chopped fresh basil leaves
2
tablespoons chopped fresh Italian (flat-leaf) parsley
2
tablespoons chopped fresh oregano leaves

  • 1 In small bowl, beat dressing ingredients with wire whisk until well blended.
  • 2 On large platter, arrange tomatoes and onion. Drizzle dressing over tomatoes and onion. Sprinkle with basil, parsley and oregano.

Love the simplicity of this salad. Used tomatoes, yellow, green, and orange peppers, cucumbers and purple onion. The dressing was light and delicious - added a small amount of feta while serving to each portion and everyone raved!!!! Will make again.

I've been making something similar to this salad for years. Add Sungold tomatoes, fresh mozzarella (small cheese balls cut in half) and some balsamic vinegar to kick up the flavor. Can also add different colored bell peppers chopped into small pieces and cucumbers.
