package (1 lb) pasteurized prepared cheese product loaf, cut into cubes

can (15.25 oz) Green Giant® whole kernel corn, drained
1
can (15 oz) Progresso® black beans, drained, rinsed
1
can (10 oz) diced tomatoes with green chiles, undrained
1
cup milk
Fresh cilantro sprigs, if desired
  • 1 In 4-quart Dutch oven, mix all ingredients except cilantro.
  • 2 Cook over medium-low heat, stirring frequently, until cheese is melted and soup is hot. Garnish each serving with cilantro.

This soup was super easy to make and even my kids loved it! The only change I made was adding some pan fried onions and a little more heat with smoked paprika.

It is rotel dip with milk, corn and beans....of course it isn't good for you! lol Think about it! But is so amazing! I found the recipe in one of my grandmother's old BC cookbooks and had to make it! It's great with a 1/2lb of ground beef or shredded chicken in it too, very quick, easy and versatile. Just not healthy (And I'm not complaining!!)

This was really good, but I made a few modifications...I melted the cheese in chicken broth, used Green Giant Chipotle corn and added a can of drained diced potates...then added fajita seasoning to taste. Guess you could say i used the recipe as a base then embellished. I used no milk at all. Was awesome...
