lb small red potatoes, cut into fourths (about 3 cups)

medium carrots, sliced (2 cups)

medium onion, chopped (1/2 cup)

cloves garlic, finely chopped

cans (15 to 16 oz each) great northern beans, drained, rinsed

cups Progresso® chicken broth (from 32-oz carton)

cups diced fully cooked ham

teaspoon Italian seasoning

teaspoon salt

tablespoons chopped fresh parsley
1
tablespoon olive or vegetable oil
  • 1 In 3- to 4-quart slow cooker, mix all ingredients except parsley and oil.
  • 2 Cover: cook on Low heat setting 8 to 10 hours.
  • 3 Stir in parsley and oil before serving.

I luvd the intentions of this creative soup. I don't and hate to critize other cooks receipes its not necessary & unfounded. I do however, like to put my own spin on things if I feel I need to add as I am a big herb person having my own garden I do so. Again, however, it is a good soup. I most of the time I make my own creations by experminations. Instead of "It was Blah", tryed it, it was good, however I added my own touch to to it. COOK ON....Peace

I made this recipe twice this past weekend! Once for my 90 year old foster mom and she really enjoyed it. I used carrot shreds instead of the carrot slices. I made this first one with Johnsonville Italian 3 Cheese Chicken sausage. Restaurant quality results. The second one I made for the waitresses at our local Pitt Grill. I made this one with turkey sausage and it was very good. This soup will freeze well - if you have left overs. Your house will smell wonderful when you walk in after errands, work or just doing chores.

My whole family including picky kids enjoyed this recipe. I omitted extra salt and used a lower sodium chicken broth and it was salty enough. I also substitued cubed turkey ham for traditional ham and no one noticed. The only thing I would do different next time is use my food processor to make the vegetables less chunky.
