boneless beef rump or tip roast (3- to 4-lb)

teaspoon salt

cloves garlic, finely chopped

oz small whole fresh mushrooms
1/2
cup sun-dried tomatoes in oil, drained, chopped

cup reduced-fat Italian dressing
  • 1 Spray 12-inch nonstick skillet with cooking spray. If beef roast comes in netting or is tied, do not remove. Sprinkle beef with salt and garlic. Place beef in skillet; cook over medium-high heat 5 to 6 minutes, turning occasionally, until brown on all sides.
  • 2 Spray 4- to 5-quart slow cooker with cooking spray. Place mushrooms in cooker. Place beef on mushrooms. Spread tomatoes over beef. Pour dressing over mixture in cooker.
  • 3 Cover; cook on Low heat setting 9 to 11 hours.
  • 4 Remove beef from cooker; place on cutting board. Remove netting or strings; slice beef. Serve mushrooms and juices with beef.

My family loved this recipe. I think it was the sun-dried tomatoes that made it so good! For those that commented that they used tomato paste, they need to try it again with the sun-dried tomatoes. I also used "Zesty" fat free Italian dressing. I wouldn't change a thing when I make it again! Very good!

This was surprisingly good, especially as leftovers for beef roast sandwiches! My picky fiance didn't like the idea of sun-dried tomatoes but he and his family have been scarfing it down! Definitely did not slice like the picture, it was so moist that it fell apart and shredded. We didn't mind that one bit. I added onions and carrots, which turned out just fine.

I love this recipe! It was so easy to make and delicious! I actually just put it straight in the slow cooker without cooking it on the stove first; I just sprinkled the garlic and salt on top the meat followed by tomato paste and the Italian dressing. I look forward to making this again!
