How to Make Easy Key Lime Pie

Making this Key Lime Pie couldn’t be easier.  Below are the basic steps, see full recipe for details.

1. Make the Crust

In a small bowl, mix the finely crushed graham crackers, melted butter, and sugar. Ensure the butter is evenly distributed so the crust holds together well. Press the mixture firmly into the bottom and up sides of pie plate. Use the bottom of a measuring cup or your fingers to create an even and compact layer. Bake 8 to 10 minutes until golden brown. Cool completely before adding the filling.

2. Make the Filling

Use an electric mixer, medium speed, to beat the milk and lime juice together until the mixture is smooth and thickened. This usually takes about 2-3 minutes. The lime juice will react with the milk, causing it to thicken. Gently fold in the thawed whipped topping until it is evenly distributed throughout the mixture. Be careful not to overmix, as this can deflate the whipped topping.

3. Assemble and Chill

Spoon the Key lime filling into the cooled graham cracker crust, spreading it evenly. Cover the pie with plastic wrap or aluminum foil and refrigerate for at least 1 hour, or until the filling is set. Chilling allows the filling to firm up and the flavors to meld together.

Ingredients

  • 1 1/2 cups finely crushed graham crackers (24 squares)
  • 1/3 cup butter or margarine, melted
  • 3 tablespoons sugar
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup Key lime juice
  • 1 container (8 oz) frozen whipped topping, thawed
