1. Prep

Heat your oven to 400°F. A hot oven helps the muffins rise quickly and creates that lovely domed top. And whether you're using paper liners or greasing the muffin cups, make sure they are ready before you start mixing. If greasing, only grease the bottoms to help the muffins climb the sides and get a good rise.   

2. Mix

The secret to tender muffins is to avoid overmixing – a few lumps are perfectly fine! Leave the blueberries out until the other ingredients are mixed, then gently fold them in.

3. Bake

Keep an eye on your muffins during the last few minutes of baking. They are done when they are beautifully golden brown and a toothpick inserted into the center comes out clean.

How to Store (and reheat) Easy Blueberry Muffins

    Heat oven to 400°F. Place a paper baking cup in each of 12 regular-size muffin cups, or grease the bottoms only of the muffin cups.

    In a medium bowl, stir all ingredients except blueberries just until moistened.
