Ingredients

Dough

  • 1/2 cup Gold Medal™ all-purpose flour
  • 1 tablespoon packed brown sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 2 tablespoons butter, melted
  • 3 tablespoons low-fat buttermilk

Filling

  • 1 1/2 cups fresh or frozen (thawed, drained) sliced peaches, cut into chunks
  • 1/4 cup packed brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1 tablespoon cornstarch

Topping

  • 1 teaspoon granulated sugar
  • 1/8 teaspoon ground cinnamon

    Heat oven to 400°F. Spray 2 (12-oz) ovenproof ramekins with cooking spray.

    In large bowl, mix flour, 1 tablespoon brown sugar, the baking powder, 1/4 teaspoon cinnamon and the salt. Make a well in center, and pour in butter and buttermilk. Stir until mixture begins to come together; knead 3 to 4 times to form dough; set aside.

    In medium bowl, toss Filling ingredients. Divide filling evenly between ramekins. Pinch off teaspoon-size pieces of dough, and scatter evenly over filling. In small bowl, mix Topping ingredients; sprinkle over dough.

    Bake 20 to 25 minutes or until filling is bubbly and dough is cooked through. Cover with foil if dough is getting too brown. Cool slightly before serving.
