I have to admit – Halloween is one of my favorite holidays. As much as I loved dressing up on Halloween as a kid, it was always everything else leading up to the holiday that I loved the most. My brother would make haunted houses in the basement, there would be Halloween treats to make, and of course – there would be the carving of the pumpkins.
I never really was very good at carving an elaborate design in my pumpkin, but I had fun with it all the same. And my favorite part? Saving those pumpkin seeds to roast the next day.
I’m not sure why, but I was always the one that was given the job of digging through all of the pumpkin remains, saving the seeds and then cleaning them and preparing them for roasting. We always just stuck with the basic roasted seeds with salt, but I wish back then I would have realized how many different ways there are to “spice” up your pumpkin seeds.
This version takes the sweet route, with cinnamon and sugar as the star. These are amazingly easy, and amazingly addictive. So don’t throw away those precious seeds – save them and roast them up into this sweet treat!
Start off with pumpkin seeds, melted butter, sugar and cinnamon.
