Lemon Herb Shrimp & Pasta

I sometimes fall into the trap of thinking that I don’t have time to make dinner and that we either need to grab something fast or survive on pb&j sandwiches for the night. But really, I have discovered this is a myth. There is always time for dinner! 

I think the trick is to have a few easy, fast recipes on hand that take advantage of pantry staples. This pasta dish uses a few items from the pantry, a few from the freezer and a couple from the fridge. By using a healthy shortcut like Giant Valley Fresh Steamers Basil Vegetable Medley, you don’t even have to worry about digging through the spice cabinet. Seriously, this recipe is ready in the amount of time it takes to cook a pot of pasta. And for me, that’s even quicker than running to a drive-thru! 

You will need bow tie pasta, Green Giant Valley Fresh Steamers Basil Vegetable Medley, cooked shrimp, fresh Parmesan cheese, lemon zest, olive oil and grape tomatoes.


Bring a large pot of water to a boil and cook the pasta. Cook the vegetable mix in the microwave according to the package directions.


Place the drained pasta in a large bowl.


Add the cooked veggies.


Stir in the shrimp.


Add the freshly grated Parmesan cheese and lemon zest.


Mix in the olive oil and halved grape tomatoes. Stir just to combine and serve!
