Cupcakes

box Betty Crocker® SuperMoist® white cake mix
Water, vegetable oil and egg whites called for on cake mix box
2
teaspoons red liquid food color*
Frosting

cups Betty Crocker® Whipped fluffy white frosting (from 2 containers)
  • 1 Heat oven to 350°F. Spray 60 mini muffin cups. Make cake batter as directed on box, adding food color to batter.
  • 2 Fill each muffin cup with 1 level measuring tablespoon batter.
  • 3 Bake 11 to 14 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes in pans; remove from pans. Cool completely, about 10 minutes.
  • 4 Assemble each popper using 2 mini cupcakes. Cut tops off each cupcake horizontally (save bottoms for another use). Spread or pipe about 1 tablespoon frosting on cut side of 1 cupcake top. Make a sandwich by placing cut side of second cupcake top on frosting; press lightly. Repeat with remaining cupcake tops. Store loosely covered.

I made the team color poppers during the last football playoff game between the Chicago Bears and Green Bay Packers. They were a hit! Everyone wanted the recipe. I displayed them on a tray that looked like a football field. I also used colored frosting in them that coordinated with the team colors. I did post a pic on Betty Crocker's Facebook page back in January when I made them. I will definitely be making them again!

These are so cute, I might have to make some for an after school snack today. Thanks for the great idea! :) Also, I would suggest using the bottoms as a cake-type layer in a dessert parfait, maybe with a fresh fruit like strawberries or blueberries as one layer, pudding for another and then top it all off with whipped cream. Ooh, that just sounds so GOOD right now!

Are you kidding me??? Along with the Cupcake Poppers these are absolutely the key-utest thing I have ever seen. I'll be making these as soon as I get a mini cupcake pan.
