box Betty Crocker® Suddenly Salad® ranch & bacon pasta salad mix

cup mayonnaise

teaspoons grated lemon peel
2
tablespoons fresh lemon juice
2
cups cubed cooked chicken
1 1/2
cups snow pea pods, strings removed, cut diagonally into 1/2-inch pieces
1/2
cup sliced almonds
Leaf lettuce, if desired
  • 1 Empty Pasta mix into 3-quart saucepan 2/3 full of boiling water. Gently boil uncovered 12 minutes, stirring occasionally.
  • 2 Drain pasta; rinse with cold water. Shake to drain well.
  • 3 In large bowl, stir together seasoning mix, mayonnaise, lemon peel and lemon juice. Stir in chicken, pea pods and almonds. Serve on lettuce leaves. Serve immediately, or refrigerate.

Made this for supper tonight and found it delightful. The sweet crispness of the pea pods, the crunch of the almonds, and the tang of the lemon was great. I have used Suddenly Salad as a base for many great salads. However, in the recipe as printed, I believe there was an omission. Shouldn't the pasta be added to the mix somewhere? Just sayin'. Thanks for another great time-saving recipe.

This sounds good, but the fat content is outrageous. I bet you could sub out the may for a cup of plain greek yogurt and it would still be very tasty, yet MUCH healthier.

Nothing good comes from eating something with 56 grams of fat in one serving. No way would I consider making this recipe and serving it to anyone I know. Betty Crocker you are comtributing to the obesity problem in this country by putting these high fat recipes out there for people to feed themselves, their family, friends and coworkers. Shame on you for not offering a substantially lighter version with the fat content listed and listing the full fat versions as a side note only.
