At-the-Cabin Mojitos

This delightfully minty cocktail is the one to sip while putting your feet up and watching the world go by.

Ingredients

Mint Syrup

  • 1/2 cup sugar
  • 3/4 cup water
  • 1 cup packed mint leaves, coarsely chopped

Mojitos

  • 1 cup rum
  • 1/4 cup fresh lime juice (from 2 medium limes)
  • 1 1/2 cups club soda, chilled
  • Ice cubes for 4 low-ball glasses
  • 12 thin lime slices (from 2 limes), cut in half
  • 4 fresh mint sprigs

    In 1-quart saucepan, mix mint syrup ingredients. Heat to boiling over high heat, stirring occasionally. Reduce heat to low; simmer 5 minutes or until sugar is dissolved. Remove from heat; let stand at room temperature about 20 minutes.

    Strain mint leaves mixture into pitcher; do not push on leaves or syrup will turn a dark green color. Add rum, lime juice and club soda to pitcher.

    Fill 4 low-ball glasses with ice cubes. Place halved lime slices in glasses, pushing down along side of glass, allowing ice cubes to hold them in place.

    Pour mint mixture into glasses over ice. Garnish each with mint sprig.

Tips from the Betty Crocker Kitchens

  • tip 1
    Make a big batch of the mint syrup and store it in your refrigerator for up to 1 week. If you make it beforehand, the mojitos will take only a few minutes to make.
  • tip 2
    For more mint flavor, place 1 tablespoonful chopped mint leaves in glasses before adding the ice.
  • tip 3
    Crushed ice can be substituted for the ice cubes.
