When at home, do as they do in India by serving a raita as an accompaniment and a palate cooler when eating spicy foods.

  • 1/4 cup water
  • 1 medium unpeeled tart eating apple, coarsely chopped (1 cup)

  • 1 tablespoon roasted cumin seed
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground red pepper (cayenne)

Steps

  • 1

  • 2

Tips from the Betty Crocker Kitchens

  • tip 1
To roast cumin seed, heat a heavy 6-inch skillet over medium heat about 2 minutes. Add seed to skillet and cook 1 to 2 minutes, stirring constantly, until seed turns reddish brown and has a strong, nutty aroma.
  • tip 2
Use chopped bananas, pears, peaches or other fresh seasonal fruits for the apple.
  • tip 3
Serve with Indian flatbread for an authentic Indian eating experience. Shop an Indian market for an array of choices.
