Southwest Pasta Taco Salad

Ingredients

box Betty Crocker™ Suddenly Pasta Salad™ Southwest style pasta salad
1
lb lean (at least 80%) ground beef
1
package (1 oz) Old El Paso™ original taco seasoning mix
1/2
cup plus 3 tablespoons water
2
tablespoons vegetable oil
1/2
cup Old El Paso™ Thick ‘n Chunky mild or medium salsa
3
cups chopped iceberg lettuce
2
cups shredded Cheddar cheese (8 oz)
1
cup chopped tomatoes
3
cups nacho-flavored tortilla chips, coarsely crushed

    Fill 3-quart saucepan 2/3 full of water; heat to boiling. Add pasta. Gently boil uncovered 12 minutes, stirring occasionally; drain. Rinse with cold water; drain well.

    Meanwhile, in 10-inch skillet, brown ground beef; drain. Stir in taco seasoning mix and 1/2 cup of the water; heat to boiling. Reduce heat; simmer uncovered 3 to 4 minutes, stirring frequently, until thickened. Cool 15 minutes.

    In small bowl, mix seasoning mix (from pasta salad box), 3 tablespoons water and the vegetable oil; blend well. Stir in salsa.

    In large bowl, toss pasta, ground beef mixture, lettuce, cheese and tomatoes. Add salsa mixture; toss to coat. Serve immediately, or refrigerate. Just before serving, add nacho chips; toss gently to distribute chips.
