Shrimp Salad Italiano (lighter recipe)

Ingredients

package (14 ounces) frozen precooked salad tortellini

3/4

pound cooked peeled deveined medium shrimp, thawed if frozen

1/4

cup sliced ripe olives

1/4

cup chopped red onion

1/3

cup fat-free Italian dressing

Thaw tortellini as directed on package.

Toss tortellini and remaining ingredients until coated with dressing. Refrigerate before serving if desired.

Play around with the flavors of this salad by replacing Italian dressing with another variety of fat-free dressing.
Thaw frozen shrimp in a flash by placing in a colander and rinsing with cool water until ice crystals have melted and shrimp is thawed.
