Red Cabbage with Apples

Cabbage and apple come together in this wonderful side dish - ready in about an hour.

Ingredients

  • 3 tablespoons butter or margarine
  • 2 medium unpeeled tart cooking apples, sliced
  • 1 medium head red cabbage, coarsely shredded (8 cups)
  • 1/4 cup water
  • 1/4 cup red wine vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

Steps

    Melt butter in Dutch oven over medium heat. Cook apples in butter 5 minutes, stirring occasionally.

    Stir in remaining ingredients. Heat to boiling; reduce heat. Cover and simmer 35 to 40 minutes or until cabbage is tender.

    Jazz up this classic cabbage dish by adding 1/2 to 1 teaspoon of either caraway seed, celery seed or fennel seed. For a spicy sweet note, add 1/4 teaspoon each of ground cinnamon, ground cloves and ground nutmeg.

    Purchase preshredded cabbage in the produce section or deli at your supermarket. If you choose to shred your own cabbage, you can do so using a food processor up to one week before, and refrigerate it in a plastic bag.
