When springtime radishes start to appear in the farmers market, pick up a couple bunches and pull together this snappy salad.

Ingredients

  • 12 radishes, quartered
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • Dash freshly ground black pepper
  • 1 tablespoon torn fresh Italian (flat-leaf) parsley
  • 1/4 cup shaved Parmesan cheese

Steps

    Place radishes in medium bowl. In small bowl, mix oil, lemon juice, salt and pepper. Pour oil mixture over radishes; toss. Top with parsley and cheese.

    For variety, thinly slice the radishes instead of quartering them.

    Spoon radish mixture over arugula or spinach for a more traditional salad.
