If you love sweet and savory flavors together, then you’ll adore these hand-held pineapple-chicken pizza pockets. Quick mini crusts are made stirring Original Bisquick™, water, and olive oil together into a simple dough that’s patted into circles. They are topped with a delightful combination of chicken pizza flavors—cooked chicken, pasta sauce and Monterey Jack cheese—but also sweet, pineapple tidbits and crunchy green bell pepper. All the fillings are enclosed inside the soft and tender crust, making these pizzas perfect for nights on-the-go, or, when you need to perk up pizza night at your house.

    Heat oven to 450°F. Line cookie sheet with foil; spray foil with cooking spray.

    In medium bowl, stir together Bisquick mix, water and oil until moistened. Let stand 15 minutes.

    Knead dough slightly to form ball. Divide dough into 8 equal pieces. On surface lightly dusted with additional Bisquick mix, roll each dough piece with rolling pin to 6-inch round about 1/8 inch thick.

    In small bowl, stir together pasta sauce, chicken and bell pepper. Spoon 1 heaping tablespoon chicken mixture on each dough round. Top each with 1 tablespoon pineapple and 1 tablespoon of the cheese. Fold dough over; seal edge with fork. Place on cookie sheet.

    Bake 12 to 18 minutes or until golden brown. Sprinkle pizza pockets evenly with remaining 1/4 cup cheese. Bake 1 to 2 minutes longer or until cheese is melted.
