Basil Vinaigrette
- 1/3 cup olive or vegetable oil
- 1/4 cup red wine vinegar
- 2 tablespoons chopped fresh or 2 teaspoons dried basil leaves
- 1 teaspoon sugar
- 1/4 teaspoon salt
Salad
- 6 cups chopped romaine lettuce
- 1 cup chopped fresh basil leaves
- 1 cup cut-up cooked chicken
- 2 large tomatoes, chopped (2 cups)
- 2 medium cucumbers, chopped (1 1/2 cups)
- 1 package (3 oz) Italian salami, chopped
- 1 can (15 to 16 oz) cannellini beans, rinsed and drained
