Grilled Steak Caesar Salad

Ingredients

Classic Caesar Dressing

  • 1/4 cup olive or vegetable oil
  • 1/4 cup fat-free cholesterol-free egg product
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon anchovy paste
  • 1 large clove garlic, finely chopped

Salad

  • 1 lb boneless beef top sirloin steak, 1 inch thick
  • 1 tablespoon freshly ground pepper
  • 1 head romaine lettuce, torn into bite-size pieces
  • 1 cup garlic-flavored croutons
  • 1/2 cup shredded Parmesan cheese (2 oz)

Steps

    Heat coals or gas grill for direct heat. In tightly covered container, shake all dressing ingredients until well blended. Refrigerate until serving time.

    Sprinkle beef with pepper. Cover and grill beef over medium heat 15 to 18 minutes for medium doneness (160°F), turning once. Cut beef across grain into thin slices.

    In large bowl, toss romaine, croutons, cheese and dressing. Top with beef slices. Serve with additional shredded Parmesan cheese if desired.
