Ingredients

Brownie Base

  • 1 box Betty Crocker™ Fudge Brownie Mix
  • 2 tablespoons water
  • 1/2 cup vegetable oil
  • 2 eggs

Mint Frosting

  • 3/4 cup butter, softened
  • 3 cups powdered sugar
  • 2 tablespoons heavy whipping cream
  • 1 teaspoon peppermint extract
  • 10 drops green gel food color

Chocolate Ganache

  • 1 cup heavy whipping cream
  • 3 cups semisweet chocolate chips
  • 3 tablespoons butter

Instructions

    Heat your oven to 350°F. Line your 9-inch square pan with cooking parchment paper. This helps the brownies easily slide out of the pan.

    Prepare the Brownie Base according to the step by step instructions on brownie mix box, using brownie mix, water, oil, and eggs. Pour the brownie mixture into your prepared pan; bake for 33 to 36 minutes. Cool.

    Meanwhile, in a medium bowl, add all of the Mint Frosting ingredients and slowly mix until combined. Spread the frosting over the cooled brownies. Then, I popped this in the fridge for 1 hour for the frosting to set.

    Meanwhile, add the heavy whipping cream to a small saucepan and bring to a simmer. In another bowl, add the chocolate chips and butter. Pour the warm cream over the chocolate chips and butter. Let that sit for 1 minute, and slowly mix until smooth. Pour the ganache over the mint frosting, and let it sit in the fridge for 1 hour until the chocolate ganache is set.
