This Easy Sticky Toffee Pudding Cake is not only a snap to mix up, but its unconventional technique creates a surprise caramel sauce underneath the cake as it bakes. A box of yellow cake mix is combined with finely minced dates to create a rich batter that is spread into a baking pan. The batter is then covered in brown sugar and melted butter before pouring boiling water over everything in the pan. While it may feel wrong, trust the process and carefully place the pan in the oven to bake. While the cake bakes, the water will combine with the brown sugar and butter and sink through the cake batter to the bottom of the pan, creating a puddle of rich toffee sauce underneath the cake. The end result is a tender, rich cake, with a warm buttery sauce built right in.

1. Blend the Dates

Blending the dates with a food processor or blender is much easier than mincing them with a knife. Dates are very sticky and getting them small enough so they don’t sink through the batter is easier in the food processor. Adding a little milk helps create a chunky paste that is easier to blend into the batter.

2. Make the Batter

3. Add Boiling Water

    Heat oven to 350°F. Lightly grease a 13x9-inch baking pan with butter.

    Place the dates in the bowl of a food processor or blender and add a few tablespoons of the milk. Blend into a rough paste.

    In large bowl, mix cake mix, remaining milk, eggs, 1/4 cup melted butter, and the date paste until well blended. Evenly spread batter into the prepared pan.

    Sprinkle brown sugar evenly over batter (it will be a thick layer).

    Drizzle 3/4 cup melted butter over the brown sugar.
