Ingredients

  • 1 1/3 cups Gold Medal™ All Purpose Flour
  • 2/3 cup packed brown sugar
  • 1/3 cup unsweetened baking cocoa
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup buttermilk
  • 1/3 cup butter, melted
  • 1 large egg
  • 1 teaspoon vanilla
  • 1 cup coarsely shredded zucchini (about 1 medium)
  • 1/2 cup semisweet chocolate chips
  • 1/4 cup chopped walnuts

Instructions

  • Step 
    1

    Heat oven to 375°F. Place a paper baking cup in each of 12 regular-size muffin cups.

    In a large bowl, stir flour, brown sugar, cocoa, baking soda, and salt with a spoon. In a small bowl, beat buttermilk, melted butter, egg, and vanilla with a whisk until blended. Pour the buttermilk mixture into the flour mixture; stir until just moistened.

    Stir in zucchini, chocolate chips, and walnuts.

    Divide the batter evenly among the muffin cups.

    Bake 20 to 24 minutes or until a toothpick inserted in the center comes out clean. Cool 5 minutes; remove from the pan. Serve warm or cool.
