Brie, Lettuce and Tomato Salad

Ingredients

Dressing

  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 tablespoon finely chopped shallots
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Salad

  • 4 cups packed arugula or mixed greens (about 5 oz)
  • 2 medium tomatoes, sliced
  • 3 oz brie cheese, cut into bite-size strips

Steps

    In small bowl, mix dressing ingredients with wire whisk.
  • 2
    In large bowl, toss arugula with half of the dressing. Arrange sliced tomatoes on medium platter. Place arugula and brie around tomatoes; drizzle with remaining dressing. Serve immediately.

  • Make this salad extra special by using just-picked heirloom tomatoes; use sea salt and freshly ground black pepper in the dressing.
  • Add a favorite herb, such as tarragon, basil or oregano, to the dressing.
