Ready for a fresh fall dessert that’s rooted in tradition? Pick this recipe for a simple scratch cake that might remind you of something Grandma used to make. Similar to a pound cake but with fragrant, sweet cardamom cutting through its rich buttery crumb. Sliced apples strewn across the top melt into the cake just slightly during baking for a pretty look that only needs a dusting of powdered sugar to be complete. The end result is an apple dessert that’s not too sweet but incredibly flavorful. It’s as perfect with a steaming cup of coffee at breakfast time as it is mounded with whipped cream after dinner. And since it’s ready to serve in just over an hour, it’s totally weeknight friendly!

Ingredients

Cake

  • 1 cup Gold Medal™ all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cardamom
  • 1/8 teaspoon salt
  • 1/3 cup butter, softened
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1/2 teaspoon vanilla
  • 1/3 cup milk
  • 1/3 cup sour cream

Apple Layer

  • 1 cup 1/2-inch slices peeled apple (1 medium)
  • 1 1/2 teaspoons granulated sugar
  • 1/8 teaspoon ground cardamom

Decoration

  • 2 teaspoons powdered sugar

    Heat oven to 350°F. Spray 9-inch glass pie plate with cooking spray. In small bowl, mix flour, baking powder, 1/2 teaspoon cardamom and the salt; set aside.

    In medium bowl, beat softened butter and 3/4 cup granulated sugar with electric mixer on low speed 30 seconds; increase speed to medium, and beat 2 to 3 minutes, scraping bowl occasionally, until light and fluffy. Reduce speed to low; beat in eggs, one at a time, just until smooth. Beat in vanilla. On low speed, beat in one-third of the flour mixture, then half of the milk, beating well after each addition, just until smooth. Repeat with flour mixture and milk, ending with flour mixture. Scrape side of bowl occasionally. Beat in sour cream until blended. Spread batter in pie plate.

    Arrange apple slices over batter. In small bowl, mix 1 1/2 teaspoons granulated sugar and 1/8 teaspoon cardamom until blended. Sprinkle over apple slices.

    Bake 30 to 34 minutes or until toothpick inserted in center comes out clean. Cool 30 minutes.

    When ready to serve, sprinkle powdered sugar over top. For 8 servings, cut into 8 wedges. Store covered at room temperature.

    Granny Smith apples were used in this recipe. Choose your favorite baking apple, such as McIntosh, Braeburn, Honeycrisp or other apple firm enough to hold its shape in the heat of the oven.

    This cake is wonderful with sweetened whipped cream. To make 1 1/2 cups whipped cream, place medium deep bowl and beaters in freezer or refrigerator to chill. Place 3/4 cup heavy whipping cream and 1 tablespoon powdered sugar in chilled bowl. Beat on low speed until mixture begins to thicken. Add 1/2 teaspoon vanilla; beat on high speed until soft peaks form.

    Cardamom is a spice native to India and popular in a diverse range of cuisines—in India as well as in Middle Eastern and Nordic countries. It can be bought in whole pods, seeds or ground into a powder. Cardamom’s intensity varies depending on how much processing it has undergone—so cardamom is mildest in ground form, but still plenty flavorful. If you’re familiar with Nordic pastries, you might recognize the strong fragrant aroma and flavor it lends to this cake.
