lb dark-orange sweet potatoes (about 3), peeled, cut into 2x1/2-inch slices

small onion, sliced (about 1/2 cup)

  • 1 In 12-inch nonstick skillet, heat oil and butter over medium-low heat until butter is melted.
  • 2 Toss remaining ingredients with butter mixture in skillet, then spread evenly in skillet. Cook about 10 to 12 minutes, stirring occasionally, until potatoes are just barely tender.
  • 3 Increase heat to medium. Cook about 10 minutes longer, turning potatoes occasionally with pancake turner, until potatoes are browned and tender.

Expert Tips

Vegetable oil helps keep the butter from burning, while the butter adds great flavor and helps the potatoes brown. Add these potatoes and a simple dish of steamed broccoli to complete a meal of plain rotisserie chicken.
