Ingredients

cup butter or margarine, softened

tablespoons molasses

teaspoons ground ginger
3/4
teaspoon ground cinnamon
1/4
teaspoon ground cloves
1
egg
1
pouch (1 lb 1.5 oz) Betty Crocker® oatmeal cookie mix
1/3
cup coarse sugar

Directions

  • 1 Heat oven to 375°F. In large bowl, beat butter, molasses, ginger, cinnamon, cloves and egg with electric mixer on medium speed until well blended. Add cookie mix; beat until soft dough forms.
  • 2 Shape dough into 1-inch balls. Roll balls in sugar. On ungreased cookie sheets, place balls 2 inches apart.
  • 3 Bake 8 to 10 minutes or until edges are light golden brown. Cool 5 minutes; remove from cookie sheets to cooling racks. Store in tightly covered container.

OMG! This is such a yummy cookie! This is a recipe that I will make again and again. My only modification was that I added a little more ginger. I like a spicy cookie. Again, yummy! I see why this was an award winning recipe.

Loved these! So very easy and got lots of compliments as part of the holiday tray! I had to make multiple batches already and have already emailed the recipe to other folks. Also a fun one to have the kids help with when it comes to rolling in the sugar. I used a small cookie scoop - like the ice cream scoop - and dropped them right in the sugar and had no problems with them sticking at all. just like the ginger snaps from childhood but chewy so even better!

I made these as part of a Christmas gift basket, and everyone loved them! I had to make a second batch for my husband! I still can't believe a cookie this good starts with a mix!
