Slow Cooker Orange Pork Tenderloin with Butternut Squash

3pounds butternut squash, peeled and cut into 2-inch pieces (6 cups)
1/2teaspoon salt
1pork tenderloin (2 pounds)
1/4cup orange marmalade
2cloves garlic, finely chopped
1.Arrange squash around edge in 3- to 4-quart slow cooker. Sprinkle with salt. Place pork in slow cooker (it will overlap squash slightly). Mix marmalade and garlic; spread evenly over pork.
2.Cover and cook on low heat setting 7 to 8 hours.
3.Remove pork from cooker; place on cutting board. Cut pork into slices; serve with squash.

Variation
Try another flavor of marmalade, such as pineapple.
Success
If you have time, brown the pork in oil on all sides before placing in the slow cooker. Browning adds color and a deeper flavor.

Watching your salt intake? Omit the salt, and season with pepper.
Special Touch
This is a great recipe to serve for entertaining. Fan pork slices in a circular pattern on a platter, and spoon squash in the center. Drizzle remaining juices over pork, and garnish with slices of fresh orange.
