Slow-Cooker Orange Pork Tenderloin with Butternut Squash

Ingredients

  • 3 pounds butternut squash, peeled and cut into 2-inch pieces (6 cups)
  • 1/2 teaspoon salt
  • 1 pork tenderloin (2 pounds)
  • 1/4 cup orange marmalade
  • 2 cloves garlic, finely chopped

Steps

    Arrange squash around edge in 3- to 4-quart slow cooker. Sprinkle with salt. Place pork in slow cooker (it will overlap squash slightly). Mix marmalade and garlic; spread evenly over pork.

    Cover and cook on low heat setting 7 to 8 hours.

    Remove pork from cooker; place on cutting board. Cut pork into slices; serve with squash.

    If you have time, brown the pork in oil on all sides before placing in the slow cooker. Browning adds color and a deeper flavor.

    This is a great recipe to serve for entertaining. Fan pork slices in a circular pattern on a platter, and spoon squash in the center. Drizzle remaining juices over pork, and garnish with slices of fresh orange.
