boneless skinless chicken breasts (about 2 lb)

tablespoons vegetable oil

tablespoons Old El Paso® taco seasoning mix (from 1 oz package)

slices (3/4 oz each) Monterey Jack cheese

cup Old El Paso® Thick 'n Chunky salsa
  • 1 Heat gas or charcoal grill. Brush both sides of chicken with oil; sprinkle with taco seasoning mix.
  • 2 Place chicken on grill. Cover grill; cook over medium heat 15 to 20 minutes, turning once and topping each chicken breast with cheese during last minute of cooking time, until juice of chicken is clear when center of thickest part is cut (170°F). Serve chicken topped with salsa.

We have tried this recipe twice and it's now a family favorite. We use our own personal favorite salsa, and we tried it once with colby jack cheese (which I think I liked better), and it's just an all-around good meal. We make it with Mango Sticky Rice on the side (my version is 1 chopped mango (or two, if they're on sale. Can't have too much mango), 2 cups of cooked jasmine rice, and 1 can of sweetened, condensed milk. 1/3 c. of sugar optional. Mix it all together and you've got one amazing side that goes with so many things. If you haven't tried this Santa Fe Grilled Chicken recipe, you really should. Make some Mango Sticky Rice on the side and you've got one awesome meal.
