cup butter or margarine, softened

cup packed brown sugar

cup honey

cups Gold Medal® all-purpose flour

teaspoon baking soda
1/2
teaspoon salt
1/2
teaspoon ground cinnamon

cups Fiber One® original bran cereal
Glaze
1/2
cup powdered sugar

to 4 teaspoons milk
  • 1 Heat oven to 375°F. In medium bowl, beat butter, brown sugar, honey and egg with electric mixer on medium speed, scraping bowl constantly, until smooth. Stir in flour, baking soda, salt and cinnamon. Stir in cereal.
  • 2 Onto ungreased cookie sheets, drop dough by rounded teaspoonfuls 2 inches apart.
  • 3 Bake 7 to 9 minutes or until set and golden brown (surfaces will appear shiny). Cool 1 to 2 minutes; remove from cookie sheets to cooling racks. Cool 15 minutes.
  • 4 In small bowl, mix glaze ingredients until smooth. Drizzle over cookies.

Expert Tips

If you're all out of honey, you can use 1/2 cup plus 1 tablespoon granulated sugar and 2 tablespoons water instead of 1/2 cup honey.

I am a little confused as to why this and the other Fiber One Peanut Butter cookies are listed in the "High Fiber" section when the Nutritional Information states that they contain 1g Fiber per serving.

Yum! I used 1/4 cup of butter and 1/4 of applesauce instead of all the butter to make them healthier, and they turned out great! They're sweet, chewy, and flew off the plate. Mine baked perfectly in 6 minutes, but I think they were smaller than the recipe said because it made 60, not 36.
