Fresh corn is best eaten the day it's purchased, but you can store it in a plastic bag in the refrigerator for up to a day.
Soaking the corn in cold water helps tenderize it and also helps prevent the husks from burning while grilling. If you're short on time, soak the corn for 15 minutes and grill the corn as directed.
