medium carrots, sliced (3 cups)
1/4
cup sugar

tablespoons butter or margarine

teaspoon finely chopped crystallized ginger
  • 1 Heat 1 inch water (salted if desired) to boiling in 3-quart saucepan; add carrots. Heat to boiling; reduce heat. Cover and cook about 5 minutes or until crisp-tender; drain and set aside.
  • 2 Cook sugar, butter and ginger in same saucpan over low heat, stirring constantlly, until bubbly; add carrots. Cook over low heat 1 to 2 minutes, stirring occasionally, until carrots are glazed and heated through.

Expert Tips

Cooked in a sugar syrup and coated with coarse sugar, crystallized ginger can be found in the spice section of your grocery store.

Using brown sugar instead of granulated sugar gives these carrots a darker, richer sweetness.

i made these carrots for dinner tonight. i did not have right at hand crystalizied ginger so i use ground ginger. and i did not chop up my carrots i use whole baby carrots with their hair on them and this dish was yummy and i also used brown sugar instead of white sugar, it was not too sweet or ginger it was just right i will make these again!
