jar (4.5 oz) Green Giant® sliced mushrooms, drained

cup chopped onion (about 1 large)

cup Original Bisquick® mix

cup pizza sauce
1/4
cup grated Parmesan cheese

cup chopped green bell pepper

to 1 1/2 cups shredded mozzarella cheese (4 to 6 oz)
  • 1 Heat oven to 425°F. Grease 10-inch glass pie plate with shortening or cooking spray. Sprinkle mushrooms, 2/3 cup of the onion and 1/3 cup Parmesan cheese in pie plate.
  • 2 In medium bowl, beat milk, eggs and Bisquick mix with wire whisk or electric mixer about 1 minute or until smooth. Pour over vegetable mixture in pie plate.
  • 3 Bake 20 minutes. Spread pizza sauce over top. Top with 1/4 cup Parmesan cheese, remaining 1/3 cup onion, the bell pepper and mozzarella cheese. Bake 15 to 20 minutes longer or until cheese is light brown. Let stand 5 minutes before cutting.

Expert Tips

Finely shredded pizza cheese blend, a blend of mozzarella and Cheddar cheeses, can be used instead of the mozzarella cheese.

Finish off this easy meal with a tossed salad and garlic bread.

I used canned black olives instead of mushrooms. It turned out very quiche-like. When I first took it out of the oven, I was concerned that it was undercooked, because it was a bit jiggly. It was fine though, and quite tasty. It was even better after I'd let it sit in the fridge for a few hours (and then reheated, of course, in the microwave). The flavors blended together very nicely then, and it didn't seem as quiche-y.

My hubby and I love making this.... we omit the mushrooms because I'm allergic and had 1-2 pounds ground hamburger and about 1/2 pound pepperoni. It tastes great!

We're trying out a new no-red-meat-during-the-week routine (yep, we have a big 'ol steak on Saturday!). I made this recipe with fresh sauteed mushrooms instead of canned. Also added lots of fresh basil. We enjoyed it very much, and the leftovers are great, too.
