Chicken and Barley Soup

Soup doesn't need to simmer for hours when you rely on rotisserie chicken, chicken broth, canned tomatoes and quick-cooking barley.

carton (32 oz) Progresso® chicken broth (4 cups)
1
can (14.5 oz) diced tomatoes, undrained

medium carrots, sliced (1 cup)
2
medium stalks celery, sliced (1 cup)
1
cup sliced fresh mushrooms (about 3 oz)
1/3
cup uncooked quick-cooking barley
1
teaspoon dried minced onion

cups chopped deli rotisserie chicken (from 2- to 2 1/2-lb chicken)
  • 1 In 3-quart saucepan, mix all ingredients except chicken. Heat to boiling over medium-high heat. Reduce heat to medium. Cover; simmer 15 to 20 minutes or until barley is tender.
  • 2 Add chicken. Cover; cook about 3 minutes or until chicken is hot.

Expert Tips

Add 1/2 teaspoon dried thyme leaves to the soup for a savory flavor.

Be sure to use quick-cooking barley because the regular type needs to cook longer than this recipe allows.

    I'm surprised to see other reviewers question the use of rotisserie chicken in this recipe. I think one reviewer even used the word "horrible" to describe it. It was also put into the same category as canned chicken - are you kidding me? It was clear from their reviews that they had not even tried the recipe using rotisserie chicken. To them I say AMATEURS! I am a true cook who has entered and won several national recipe contests, had some of my recipes published and am often told that I should publish a cookbook, start a restaurant or catering business, etc., and I use rotisserie chickens for several of my best recipes. Rotisserie chickens are slow roasted and full of flavor. The meat is very moist and savory and using it can save huge amounts of time. Ever made chicken salad using a rotisserie chicken? Wow! How about using it to make quesadillas with cheddar cheese, green onions and your favorite barbeque sauce? YUM! I make a white chicken chili using rotisserie chicken and am constantly asked for the recipe. It's full of flavor and so easy to make, thanks to the use of rotisserie chicken. So, for the rest of you out there, don't be afraid to use it in recipes, it's wonderful!

    you have to acquire a taste for rotisserie chicken; that and canned chicken are horrible in a soup. fresh thighs are the best. i agree w/MsJaz. also, i saute onions and celery before adding to soup; tastes more like homemade. Also i used crushed tomatoes that does not have chunks in. just my preference. Pgh. Phyl

    Very easy recipe and quite nutritious. I just can not see using already cooked, rotisserie chicken when it is so easy to buy skinless, boneless breasts or thighs..... so much better to me.
