All-Purpose Bleached

This flour is all-purpose because it is suitable for all types of baking. It is a blend of select hard and soft wheat, which gives it an all-purpose quality. Bleaching agents are used in small amounts to whiten the flour.

For best results, use recipes developed for all-purpose flour. If necessary to use all-purpose flour in recipes calling for self-rising, add 1 ½ teaspoons baking powder and ½ teaspoon salt for each cup of flour.

All-Purpose Unbleached

Unbleached flour is all-purpose flour without the bleaching agents. Unbleached flour is slightly less-white than bleached flour; therefore, baked goods such as white bread will have a subtle creamy color.

Self-Rising

This flour is all-purpose flour with baking powder and salt added. Successful baking outcomes are ensured by using recipes specifically developed for self-rising flour.

Harvest King Better for Bread Flour

This is unbleached flour made from a special blend of wheat higher in protein than the wheat used in all-purpose flour. Protein produces gluten that gives structure-building properties required in baking products, particularly those made with yeast as a leavening agent.

Harvest King absorbs greater quantities of water and has a more elastic dough-handling quality than all-purpose flour. It contains a small amount of ascorbic acid to improve dough handling and produce better volume and crumb structure in bread. This flour is excellent for yeast bread baking and other yeast-raised baked goods such as pan breads, rolls, buns, pizza crust and hearth bread. Harvest King is ideal for automatic bread machines. It is also suitable for quick breads and cookies. It is least suitable for delicate baking, such as cakes and pastries.

Whole Wheat

This specialty flour is milled to an even, medium-fine granulation from the complete wheat kernel (brand, germ and endosperm). Do not sift, as sifting will clog the sifter, and flavorful, nutritious particles that distinguish this flour will be lost. Gold Medal Whole Wheat flour is all-natural and heart healthy.

Whole wheat flour can be used in breads, quick breads, cakes, cookies and pie crusts. While successful baking outcomes are ensured by using recipes developed for whole wheat flour, it can be used in all-purpose flour recipes by using half whole wheat and half all-purpose flour.

Our Organic flour is all-purpose flour and can be used in any recipe calling for all-purpose flour. It is certified organic, unbleached, enriched and presifted.

Wondra

This flour is a high-quality, bleached, enriched all-purpose flour milled from a select blend of wheat. Wondra is quick mixing and dissolves easily, even in cold water. Patented agglomeration process turns this all-purpose flour into a perfect solution for lump-free gravies and sauces, as well as tender pancakes and popovers.  It is also ideal for breading fish and poultry.
