Canned Peaches: Peaches bring natural sweetness, a lovely fruity aroma, and a tender texture. Draining them prevents a soggy pastry, and reserving the juice is a clever trick for your icing!

How to Make Peach Cinnamon Streusel Cups

These Peach Cinnamon Streusel Cups come together with a few simple steps. Follow the full recipe below for all the details.

1. Prep and Mix Filling

Generously spray your muffin cups. Use Soften cream cheese. Either soften by letting it sit at room temperature for 30-60 minutes or briefly microwave on low (10-15 seconds) until it's finger-indent soft (not melted). Mix it with the other filling ingredients until smooth. 

2. Create Pastry 

Stir Pastry ingredients until a soft dough forms, be sure to use softened, not melted butter. Divide equally and press dough in the bottom and up the sides of each muffin cup. 

2. Mix the Crumb Topping

Mix Bisquick, brown sugar, cinnamon, and cold, cut-up butter until coarse crumbs form. 

3. Fill and Bake

Fill each cup with 2 teaspoons of the smooth cream cheese mixture. Next, add about 1 tablespoon of finely chopped peaches; make sure they are thoroughly drained to avoid a soggy pastry, and don't forget to set aside their juice for the icing! Generously sprinkle the crumb topping over the peaches. Bake for 16 to 18 minutes, or until the edges are lightly golden.

4. Drizzle and Enjoy

Let the streusel cups stand in the pan for 10 minutes to allow them to set properly before carefully removing them to a cooling rack. While they cool slightly, stir 1/2 cup powdered sugar with the reserved 1 tablespoon peach juice. Drizzle this over the warm streusel cups.

Ingredients

Filling

  • 4 oz (half of 8-oz package) cream cheese, softened
  • 3 tablespoons powdered sugar
  • 1/2 cup finely chopped canned peaches in juice (from 15-oz can), drained on paper towel (reserve 1 tablespoon juice)

  • 1/2 cup powdered sugar

    Heat oven to 350°F. Spray 12 regular-size muffin cups with cooking spray.

    In a small bowl, mix cream cheese and 3 tablespoons powdered sugar until smooth; set aside.

    In a medium bowl, stir Pastry ingredients until a soft dough forms. Divide the dough evenly among muffin cups (about 1 generous tablespoon). Spread dough into the bottom and up the sides of each muffin cup, making a well in the center.

    In another small bowl, using a fork or pastry blender, mix Crumb Topping ingredients until mixture looks like coarse crumbs; set aside.

    In each muffin cup, spoon 2 teaspoons of the cream cheese mixture and scant 1 tablespoon of the peaches.

    Sprinkle Crumb Topping evenly over the peaches in each cup.

    Bake 16 to 18 minutes or until the edges are light golden brown. Let stand 10 minutes; remove from the pan to a cooling rack.
