These Peach Cinnamon Streusel Cups come together with a few simple steps. Follow the full recipe below for all the details.
Generously spray your muffin cups. Use Soften cream cheese. Either soften by letting it sit at room temperature for 30-60 minutes or briefly microwave on low (10-15 seconds) until it's finger-indent soft (not melted). Mix it with the other filling ingredients until smooth.
Stir Pastry ingredients until a soft dough forms, be sure to use softened, not melted butter. Divide equally and press dough in the bottom and up the sides of each muffin cup.
Mix Bisquick, brown sugar, cinnamon, and cold, cut-up butter until coarse crumbs form.
Fill each cup with 2 teaspoons of the smooth cream cheese mixture. Next, add about 1 tablespoon of finely chopped peaches; make sure they are thoroughly drained to avoid a soggy pastry, and don't forget to set aside their juice for the icing! Generously sprinkle the crumb topping over the peaches. Bake for 16 to 18 minutes, or until the edges are lightly golden.
