Filling
- 4 oz (half of 8-oz package) cream cheese, softened
- 3 tablespoons powdered sugar
- 1/2 cup finely chopped canned peaches in juice (from 15-oz can), drained on paper towel (reserve 1 tablespoon juice)
Muffins
- 2 cups Bisquick™ Original Pancake & Baking Mix
- 1/4 cup 2% milk
- 3 tablespoons firmly packed brown sugar
- 3 tablespoons butter, softened
- 1 large egg
Crumb Topping
- 1/3 cup Bisquick™ Original Pancake & Baking Mix
- 3 tablespoons firmly packed brown sugar
- 1/2 teaspoon ground cinnamon
- 2 tablespoons cold butter
Icing
- 1/2 cup powdered sugar
Instructions

Step1Heat oven to 350°F. Spray 12 regular-size muffin cups with cooking spray.

Step2In small bowl, mix cream cheese and the 3 tablespoons powdered sugar until smooth; set aside.

Step3In medium bowl, stir together Muffin ingredients until soft dough forms. Divide dough evenly in muffin cups (about 1 generous tablespoon). Spread dough into bottom and up sides of each muffin cup, making a well in the center.

Step4In another small bowl, using fork or pastry blender, mix Crumb Topping ingredients until mixture looks like coarse crumbs; set aside.

Step5In each cup, spoon 2 teaspoons of cream cheese mixture and scant 1 tablespoon of the peaches; sprinkle evenly with Crumb Topping.

Step6Bake 16 to 18 minutes or until edges are light golden brown. Let stand 10 minutes; remove from pan to cooling rack.

Step7In small bowl, stir 1/2 cup powdered sugar and reserved peach syrup until smooth and of drizzling consistency. Drizzle over warm streusel cups. Serve warm. Refrigerate any remaining streusel cups.
