Ingredients

cup Progresso™ chicken broth (from 32-oz carton)

(2 1/2 to 3 lb) boneless ham, unsliced

tablespoons butter, melted
2
tablespoons packed brown sugar
1
tablespoon Dijon mustard
1
tablespoon Worcestershire sauce
1/4
teaspoon ground red pepper (cayenne)

    Spray 6-quart Instant Pot™ with cooking spray. Add broth to insert; place rack in bottom of insert. Make 12 thin cuts in ham, leaving bottom 1/2 inch uncut. Place ham, cut side up, on rack in insert.

    Secure lid; set pressure valve to SEALING. Select MANUAL; cook on high pressure 15 minutes. Select CANCEL. Set pressure valve to VENTING position to release pressure manually. Internal temperature in bottom center of ham (uncut portion) should be at least 140°F using instant-read thermometer. If ham is not done, select MANUAL, and cook on high pressure 3 minutes longer. Select CANCEL. Set pressure valve to VENTING position to release pressure manually.

    When cool enough to handle, carefully transfer ham to cutting board. Cut slices away from the ham.

    In small bowl, stir together melted butter, brown sugar, mustard, Worcestershire sauce and red pepper. Stir in 2 tablespoons of the cooking liquid. Serve ham with the butter sauce.

Expert Tips

  • While ham is generally available fully cooked, it’s important for a hot ham to reach 140°F so that it’s out of the “danger zone.” Bacteria grows much more rapidly on food between 40°F and 140°F, so keeping cold foods cold and hot foods hot is a key component of food safety.
  • Heating the ham in the Instant Pot™ prevents the sweetened roast from burning, which is always a risk when reheating in the oven. Use a rack to prevent the bottom of the ham from burning.
  • Not crazy about mustard? Reduce the Dijon to 1 teaspoon, or leave it out entirely.
  • The heat of cayenne pepper dissipates considerably over time. If yours has been sitting in the pantry for over a year, it’s time to replace it.
  • Be sure to refer to your own Instant Pot™ user manual for any potential setting differences.
  • Wondering what to serve up alongside your ham? We love a green vegetable for contrast, like asparagus, collard greens or just a salad. And it’s not a holiday without a deluxe potato recipe of some sort!
  • Starting from frozen ham? Remember you’ll need to defrost it in the refrigerator for food safety reasons. Depending on the size of your ham, you might need up to three or four days, so plan ahead.
