Grilled brownies? In a cast iron skillet? Absolutely, and they’re unbelievably delicious.
Few desserts can rival the rich, fudgy perfection of brownies, especially when they’re warm and fresh. Now take that classic treat and give it a smoky, campfire twist by grilling them in a cast iron skillet. The result is a crispy-edged, gooey-centered brownie with an irresistible depth of flavor.
Perfect for glamping, backyard barbecues, or any outdoor gathering, these grilled brownies bring the best of summer and chocolate together in one indulgent bite. Picture a cozy night under the stars, the aroma of freshly baked brownies filling the air, and a warm skillet straight from the grill.

Heat gas grill to between 325°F and 350°F. Grease a 10-inch cast iron skillet with vegetable oil.
In the cast iron skillet, mix brownie mix, oil, water, and egg with a whisk.

Use a flexible spatula to scrape the sides if necessary.

Place the skillet on the grill grates and close the lid. Cook for 25 to 30 minutes, checking every 5 to 10 minutes, or until the edges are set and the center is just set. Carefully remove the skillet from the grill and place on a cooling rack (the skillet will be very hot). Cool at least 10 minutes. Serve with vanilla ice cream.

The cast iron skillet will be very hot during and after baking. Be sure to use oven mitts or grill gloves when touching or removing the skillet from the grill.
