Frosted Strawberry Tart Cookie Cups

Toaster pastries with their crunchy icing and jammy centers are an iconic childhood treat. These mini cookie tarts borrow their inspiration from frosted strawberry toaster pastries with Betty Crocker™ Soft Baked Birthday Cake Batter Cookie Mix doing the heavy lifting.

Each little strawberry cookie cup tart features a golden cookie shell that holds a jammy center, a soft cookie top, and sweet frosting. The cookie base is first parbaked, making for a slightly crunchy texture that contrasts wonderfully with the soft cookie top, jam, and frosting. Add sprinkles on top for even more textural contrast!

Cookies

Filling

  • 1/2 cup strawberry jam

Frosting

  • 2 cups powdered sugar
  • 2 to 3 tablespoons water
  • 1 teaspoon clear vanilla extract
  • Pinch of salt
  • Candy sprinkles to decorate

Instructions

    Heat the oven to 350°F. Spray 24 mini muffin cups with cooking spray.

    Mix the cookie mix, butter, eggs, and 1 tablespoon water according to the package instructions. Scoop 1 tablespoon of dough into each mini muffin cup. Bake for 10 minutes.

    Meanwhile, roll the remaining dough into 24 small, even-sized balls. Set aside.

    Remove cookie bases from the oven. Immediately dip the end of a wooden spoon or any tool that will make a small well in the cookie cup in flour to prevent sticking; press a well in the center of each cookie while still hot. (I used a muddling tool; a wine cork works, too!)

    Fill each well with a generous teaspoon of jam, and top with one of the cookie dough balls from step 3.

    Bake for 11 to 13 minutes longer. Remove from the oven, and cool before removing from the muffin pan.

    In a medium bowl, mix the powdered sugar, 1 tablespoon of water, vanilla, and salt. Add more water until you get the frosting consistency you like.

    Dip cookie cups in frosting or spoon the frosting on the top. Decorate with sprinkles.
