  • Ice cream sodas aren’t just for malt shops and old-time diners. They’re also a really fun dessert to offer at barbecues and dinner parties.

    When it comes to making ice cream sodas, you have to start with cold soda. Ice cold, really. So make sure it’s been well-refrigerated before you start to make your ice cream soda. Also, the ice cream should be soft enough to scoop. Hard ice cream just doesn’t work here.

    As for flavors, that’s where the fun begins. The classics are awesome. But you can also have a lot of fun with flavor by mixing ‘em up with different combinations of ice cream and soda. Offer guests a slew of mix-and-match options for their floats.

    Here are a few delicious ideas:

    Classic Root Beer Float – Add a heaping scoop of vanilla ice cream to a half-full glass of root beer
    Strawberry-Almond Delight – Add a heaping scoop of almond ice cream to a half-full glass of strawberry soda
    Creamy Cookies and Cream – Add a heaping scoop of cookies and cream ice cream to a half-full glass of cream soda
    Orange Creamsicle Soda – Add a heaping scoop of vanilla ice cream to a half-full glass of orange soda
    Fudgesicle Soda - Add a heaping scoop of chocolate ice cream to a half-full glass of cream soda

    And don’t forget the straws. Retro striped straws, which can be found on Etsy, are a really cute touch for ice cream sodas.

Ingredients

  • 2 cups mango juice or tropical juice blend
  • 1/4 to 1/2 cup lime juice
  • 12 to 14 ice cubes
  • 1 cup club soda
  • 1 pint coconut ice cream, coconut sorbet or vanilla ice cream
  • Large candy sprinkles, if desired

Instructions

    Chill glass jars or goblets in freezer several hours before serving, if desired.

    Place mango juice, lime juice and ice cubes in blender. Cover and blend on high speed about 45 seconds or until smooth. Pour mixture into 4 jars.

    Pour 1/4 cup club soda into each of the jars. Add 1 large scoop ice cream to each jar. Garnish with candy sprinkles.
