I can’t lie—I was skeptical of the cottage cheese bagel concept. Could I really make cottage cheese into a bagel? Well, I was pleasantly surprised by these—they’re hearty and soft with a bready interior that looks like an actual bagel. The egg gives the bagels their shine without having to boil them before baking, plus it allows any flavorings to adhere to the bagels. These are definitely more moist than a traditional bagel but that makes them really good, as is, no toppings or schmear needed! Bonus, these cottage cheese protein bagels come together in minutes and since they don’t contain yeast, they can be baked right away! No waiting for them to rise. 

Recipe Ingredients

Here are the main ingredients you’ll need to make our cottage cheese protein bagel recipe.

Cottage Cheese: The main ingredient of the bagels. I used whole milk cottage cheese, but low-fat would also work.

Flour: All-purpose flour lends structure and form to the bagels, resulting in a perfect chewy exterior with a tender interior.

Baking Powder: It’s what gives the bagels their lift without the fuss of waiting for yeast to rise.

Egg: Mixing a small about of water with the egg creates an egg wash. When brushed over the dough before baking, it gives the bagels their signature shine and lets your toppings stick to the surface.

Toppings: Sprinkle your favorite toppings, such as sesame seeds, everything bagel seasoning, or poppy seeds, over the egg-washed bagels before baking for a pop of flavor.

How to Make Cottage Cheese Protein Bagels

1. Blend the Cottage Cheese

This is a key part of this recipe, the bulk of the dough is cottage cheese, so don’t skip this part! You want the cottage cheese to be smooth and creamy before proceeding. You can blend the cottage cheese in a mini or standard sized food processor, a blender, or even a hand-held immersion blender.

2. Make the Cottage Cheese Protein Bagel Dough

This dough comes together so easily, you just add all the ingredients to your bowl and mix until the dough forms. It may be a little sticky, so have some extra flour on hand for dusting. Knead the dough for about 1 minute to bring it all together.

3. Shape the Cottage Cheese Protein Bagels

Divide the dough into four portions, roll a piece of dough into a log about 6-8 inches long, and join the ends to make a circle, pinching and squeezing the dough to make sure they stay together. Repeat with the remaining dough.

4. Top and Bake the Cottage Cheese Protein Bagels

Before baking, brush the bagels with a little egg wash and top with seasonings.

5. Serve the Cottage Cheese Protein Bagels

You can serve these warm from the oven, they are hearty and delightful on their own! Or enjoy with whatever toppings you like on a standard bagel!

 

How to Store Cottage Cheese Protein Bagels

Refrigerator

You can store leftover bagels in a container in the refrigerator for 2 days. They won’t be as soft as fresh baked, but a quick 10 seconds in the microwave will revive them nicely.

Freezer

Double wrap bagels in plastic wrap and freeze for up to one month. Thaw and reheat or toast to enjoy. 

Possible Variations

What’s your favorite bagel? You can pretty much top these however you like, from classic options like sesame to cinnamon sugar, the options are only as limited as your imagination. Or try mixing in some flavor additions like chopped herbs, jalapeños, or even shredded cheese for the ultimate cheesy bagel!

Ingredients

Bagels

  • 1 cup cottage cheese
  • 1 1/4 cups Gold Medal™ All Purpose Flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt

Topping

  • 1 egg
  • 1 tablespoon water
  • Sesame seeds, poppy seeds, sea salt, or other seasonings

Instructions

  • Step 
    1

    Heat the oven to 400°F. Line a baking sheet with parchment paper.

    In a food processor bowl, add the cottage cheese and blend until smooth.

    In a medium mixing bowl, combine the blended cottage cheese with the flour, baking powder, and salt. Mix until a dough forms.

    Knead the dough on a floured surface until it comes together and is no longer sticky.

    Divide the dough into four portions. Roll each portion into a log, about 6 to 8 inches long, and connect the ends of each log to form 4 bagels.

    In a small bowl, whisk the egg and water until thoroughly blended.

    Place the bagels on the baking sheet and brush with the egg mixture.

    Sprinkle the tops of the bagels with your choice of seeds and/or seasonings.

    Bake the bagels for 25 to 28 minutes, or until puffed and golden. Cool 15 minutes before slicing or eating.
