Ingredients

  • 2 packages (6 oz each) refrigerated salad-style imitation lobster
  • 1 red apple, halved, cored, thinly sliced (1 cup)
  • 1 fennel bulb, cut in half, thinly sliced (1 1/4 cups)
  • 1/4 cup golden raisins
  • 1/3 cup mayonnaise or salad dressing
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground mustard
  • 2 tablespoons frozen apple juice concentrate, thawed
  • 4 cups torn romaine lettuce
  • 1/2 cup chopped walnuts, if desired

Steps

  • 1
In medium bowl, mix imitation lobster, apple, fennel and raisins.
  • 2
In small bowl, beat mayonnaise, salt, mustard and apple juice concentrate with wire whisk until well blended. Pour over lobster mixture; toss.
  • 3
Among 4 plates, divide lettuce. Top with lobster salad. Sprinkle with walnuts.

  • Like them tart or sweet, crisp or soft? It doesn’t matter; just use your favorite apple in this upscale, bistro-style salad. Reserve the frilly fronds of the fennel bulb for a very pretty garnish.
