Oats for baking? Instant oatmeal is much finer than quick cooking and old-fashioined oats and can sometimes be very powdery. Instant oatmeal still has an oatmeal flavor, but it does not lend any texture or structure to baked goods. Substituting instant oatmeal in recipes using regular oats could be very disappointing. If you find yourself with lots of instant oatmeal and you want to use it in baking, I would recommend using it in a recipe like an apple crisp that wouldn’t be changed as much as a cookie or cake. Try classic Apple Crisp or Apple Crisp Shooters. Good luck!
