package (7.2-ounce size) Betty Crocker® roasted garlic mashed potatoes (1 pouch)

teaspoon ground red pepper (cayenne)

cup buttermilk
3- to 3 1/2-pound cut-up broiler-fryer chicken
1/3
cup butter or margarine, melted
  • 1 Heat oven to 425°F. Spray rectangular pan, 13x9x2 inches, with cooking spray.
  • 2 In shallow dish, stir together potatoes (dry) and red pepper. In another shallow dish, beat egg with fork or wire whisk until foamy; stir in buttermilk.
  • 3 Dip chicken pieces into egg mixture, then roll in potato mixture to coat. Place in pan. Drizzle with butter.
  • 4 Bake uncovered 30 minutes. Turn chicken; bake 20 to 25 minutes longer or until coating is golden brown and juice of chicken is clear when thickest pieces are cut to bone (165°F).

Serve with cornbread or biscuits and cooked greens.

For an herbed version of this crispy baked chicken, use 1 pouch Betty Crocker® butter & herb mashed potatoes instead of the roasted garlic variety.

This chicken was soooooo good. I didn't let my chicken thaw out all the way because it usually gets too dry. Will use totally thawed chicken next time though. This time it was half crunchy and half mashed potatoes. As with all recipes, after the first time you make it, you find a gazillion things you would do next time, and with this one there will definitely be a next time.

Definitely a new family favorite! Chicken isn't usually my favorite, but I love this recipe. I used chicken breasts and soaked them in some light salt water for about 8 hours first. Then I pounded them down to make sure they weren't too thick. Also, I didn't have cayenne pepper so I used about 1/2 t. of Red and Black pepper. I made my own buttermilk and put on thick coatings of potato buds. It was perfect - Juicy and full of flavor!
