1
medium tart red apple, unpeeled, cored and cut into wedges
1
medium orange, unpeeled and cut into wedges
1
cup chopped dates
3/4
cup packed brown sugar
1/2
cup canola or soybean oil
1
egg
1
cup Gold Medal® all-purpose flour
1
cup Gold Medal® whole wheat flour
1
cup plus 2 tablespoons ground flaxseed or flaxseed meal
1
teaspoon baking soda
1
teaspoon ground cinnamon
1/4
teaspoon salt
1/4
teaspoon ground nutmeg
1/4
teaspoon ground cloves
  • 1 Heat oven to 350°. Place apple, orange and dates in blender or food processor. Cover and blend or process until well blended.
  • 2 Mix brown sugar, oil and egg in large bowl. Stir in remaining ingredients and fruit mixture. Drop dough by tablespoonfuls onto ungreased cookie sheet.
  • 3 Bake 10 to 12 minutes or until light golden brown. Immediately remove from cookie sheet.

Expert Tips

Spread dough in ungreased rectangular pan, 13x9x2 inches. Bake 23 to 27 minutes or until toothpick inserted in center comes out clean. For bars, cut into 6 rows by 6 rows. 36 bars.

“I like to snack. I always keep apples, bananas or dried fruit at my desk. I buy the best produce available because it is a treat. That keeps me from eating other, not as healthy, foods.” Nanci D.

Because this recipe contains the apple and orange peel, it’s a great source of fiber and many other nutrients. Combining that benefit with the Omega-3 of the flaxseed makes this is an especially good choice for a sweet treat.
