Coffee Cake

cups Original Bisquick® mix
2/3
cup milk
1
egg
2
tablespoons granulated sugar
Topping
1/3
cup Original Bisquick® mix
1/3
cup packed brown sugar
1/4
teaspoon ground cinnamon
2
tablespoons cold butter
  • 1 Heat oven to 400°F. Spray 36 mini muffin cups with baking spray with flour.
  • 2 In medium bowl, stir together 2 cups Bisquick mix, the milk, egg and granulated sugar until well blended. Divide batter evenly among muffin cups.
  • 3 In small bowl, mix all topping ingredients with fork until crumbly. Sprinkle topping over batter in each cup.
  • 4 Bake 9 to 12 minutes or just until tops spring back when lightly touched. Remove from pans to cooling racks. Serve warm or cool.

The crumb topping on this was okay, but the muffin part was very, very bland. It is doubtful that I will be making these again.

I thought was pretty good. I added the extra egg like someone suggested. I added the tsp of cinn, a couple dashes of nutmeg (too much nutmeg), and a splash of vanilla to the batter. There was to much nutmeg, but that was my fault. Helpful tip, gentally pat the topping on the batter before putting it in oven. Helps it stick a bit better if the batter rises to much. I would make again.

These were a disappointment - very dry - no flavor - my son said they tasted like dry pancakes - must be that Bisquick taste. My husband, who is a big coffee cake lover, didn't care for them at all. Would never make again.
